Should I add my power switch to the L side or the N side?
I think of of L and N are grounded so it needs to be the one that isn’t. Right?

Close enough !. L actually means Line (phase). In multiphase supplies. you can have L1 L2 & L3, respectivly for each phase.
always the LIVE side must be switched as you can get a shock when you are working on it if still plugged in
I think it’s the L side. It’s LIVE, NEUTRAL and GROUND.
