I’ve heard some people say that browned food is bad for you.

Apparently food changes color because of the Maillard Reaction (among other things).

The theory is that if you give a pile of burnt stuff to a mouse it may become ill. There are some significant differences between mice and humans by the way. For one, they are not known to cook their food.

Be careful of arguments that contain the phrase “research shows” when the speaker can’t find the research they are using to support their argument. It’s often a cheap way to get credibility.
